Orange and choc muffins

Orange and Chocolate Muffins
·         2 cups all-purpose flour
·         1/2 cup sugar
·         1 tablespoon baking powder
·         1 teaspoon salt
·         3/4 cup chopped toasted almonds*
·         1 egg, beaten
·         3/4 cup orange juice
·         1/3 cup vegetable oil -guna mentega cair lebih enak
·         1/4 cup unsweetened cocoa
·         1 teaspoon finely grated orange peel
Preparation:
combine flour, sugar, baking powder. Reserve 2 tablespoons of the chopped almonds; stir the rest into the dry ingredients. In a separate bowl or large measure, combine the egg, orange juice, and vegetable oil. Stir into the dry ingredients until all ingredients are moistened add salt. Remove half of the batter to another bowl. Stir cocoa into half of the batter; set aside. Stir orange peel into the remaining batter. Place paper liners in a 12-muffin pan. Holding pan and tipping it to the side slightly, spoon in orange batter. Fill other side of muffin cups with chocolate batter. Sprinkle muffins with reserved chopped almonds. Bake at 400° for 20 minutes. Serve warm.
Makes 12 muffins.
*To toast almonds, spread out in a single layer on a baking sheet. Toast in a 350° oven, stirring occasionally, for 10 to 15 minutes. Or, toast in an ungreased skillet over medium heat, stirring, until golden brown and aromatic.

These are very good muffins and they make a nice breakfast or a sweet treat.  Bhs yg digunakan senang kan jadi biar aja bhs asal okkkkkk Ingredients:
1 spray cooking spray
3 tablespoons vegetable oil
2/3 cup unpacked brown sugar
3 large bananas, or 4 medium, mashed
2 teaspoons lemon peel, grated
1 large egg
1 large egg white
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon table salt
1/3 cup buttermilk
1/2 cup golden seedless raisins
FROSTING:1/3 cup powdered sugar
1 tablespoon fresh lemon juice

Method:Preheat oven to 350°. Coat 24 mini muffin tins with cooking spray. Blend together oil and brown sugar. Beat in bananas, lemon zest, egg and egg white. In a separate bowl, whisk together flour, baking powder, cinnamon and salt. Gently stir half the flour mixture into banana mixture; stir in buttermilk, remaining flour mixture and raisins. Divide batter among muffin pans. Bake until a toothpick inserted into center comes out clean, about 10 to 12 minutes. Let cool in pans for 10 minutes before inverting onto a rack to cool completely.

To Make Frosting:
Blend powdered sugar and lemon juice together, Drizzle
over cooled muffins.

Choc chip muffins



cara nak buat campur bahan2 kering dlm satu bekas

then campur bahans basah bekas lain then baru letak yg basah dlm yg kering



Choc chip muffin

Bahan-bahan ( 15 biji kecil )
2 cawan tepung
4 sudu teh baking powder
secubit garam
100gm butter dicairkan
3/4 cawan gula kastor
2 biji telur dipukul sedikit
1/2 sudu teh esen vanilla
1/2 cawan coklat chip
1 cawan susu segar
Cara-cara

Campurkan tepung, baking powder, garam dan gula.
Dalam mangkuk lain, campurkan telur yg telah dipukul dengan esen vanilla dan butter. Pukul sedikit, masukkan susu. Masukkan campuran tepung tadi.
Masukkan choc chip, kacau rata. Bakar lebih selama 12-15min.

Muffins chocolate

 Muffin coklat
Resepi yg simple. tak payah pukul sehingga kembang. Cuma gaul sehingga sebati

Bahan-bahan ( 10 biji )
200g coklat masakan
70g mentega
2 biji telur
50g gula halus
60g tepung gandum
1 sudu kecil baking powder
Cara-cara

 Antara bahan-bahan yang diperlukan
 Cairkan coklat. Gunakan kaedah "double boiler" .
 Kemudian masukkan mentega. Kacau sehingga mentega cair. Selepas tu bolehlah panaskan oven sehingga suhu 170C.
 Dalam mangkuk lain, masukkan telur dan gula. Kacau sampai sebati. Tak perlu penaik(kembang).
 Masukkan telur ke dalam mangkuk coklat. Kacau biar campuran sebati.
 Ayakkan tepung dan baking powder ke dalam mangkuk coklat. Gaul sehingga sebati.
 Isikan adunan ke dalam bekas muffin sehingga 1/2 penuh atau 60% penuh. Bakar selama 20 minit.
Selepas masak tu, mungkin muffin ni lembik sikit( sebab hanya sedikit tepung yg digunakan) tapi bila dah sejuk dia akan keras dengan sendiri. Jadi kalau lepas 20 minit tu, masih lembik tak payah bakar semula.

Banana crumb muffin

Crumb topped banana muffins

Bahan-bahan ( 18 biji )
1 1/2 cawan tepung
1 sudu kecil baking soda
1 sudu kecil baking powder
1/2 sudu kecil garam
3 biji pisang-saiz besar,lenyekkan
3/4 cawan gula
1 biji telur
1/3 cawan mentega
** Toping**
1/3 cawan gula perang
1 sudu besar tepung
1/8 sudu kecil cinnamon
1 sudu besar cold butter
1/4 cawan chopped nuts(optional)
Cara-cara

Campur semua bahan-bahan kering dan ayak
Pukul mentega dan gula sehingga putih
Masukkan telur, pukul lagi. Kemudian masukkan pisang
Masukkan bahan-bahan kering sedikit demi sedikit. Gaul sebati.
Isikan ke dalam cup muffins 2/3 penuh
** Toping. Campurkan 3 bahan pertama.
Potong cold butter dalam campuran tadi sehingga crumbly
Taburkan ke atas muffin
Bakar dalam oven pada suhu 180 degree selama 20-22 minit.

Muffin Choc chips

ni baru keluar dari oven...tomorrow teacher rose ajak rewang kat rumah dia after school..huk huk stil have to go to school tomorrow ??? its school holiday maa..
first ingat nak bake kek kelapa...tgk dlm fridge no more egg ada 2 ketul je..asked faris to buy kelapa muda nak buat jelly kelapa lah..faris balik tangan kosong kedai tutup pulak hari ni..so i found this recipe which is very easy to prepare..

choc chip muffin

A dry ingridients
250g flour + 2 teaspoon baking powder + 1/2 teaspoon baking soda, 2 tablespoon coco powder = ayak, then mixed dgn 150g gula halus ( i used half fine sugar half brown sugar sbb dah habis lah itu fine sugar),. 150g choc chip

B= wet ingredients

250g fresh milk + 1 egg + 90g cooking oil ( i used corn oil sbb dah habis lak cooking oil sejak daddy balik rajin masak kan he he )

then mixed ingredients B into A..mixed well...letak half dlm bekas cup cakes..tabur chips lagi on top..bake for about 20 min
 ni belum masuk oven lagi
